Honey Lavender Peach Pie

Ingredients

4 cups sliced peaches
1/2 cup honey
1 tablespoon dried lavender
1/4 cup all-purpose flour
1/4 cup granulated sugar
1/4 teaspoon salt
1 tablespoon lemon juice
1 teaspoon vanilla extract
2 tablespoons unsalted butter, cubed
1 double-crust pie dough
1 egg, beaten (for egg wash)

Instructions

1. Preheat your oven to 425°F (220°C).
2. In a large bowl, combine peaches, honey, lavender, flour, sugar, salt, lemon juice, and vanilla extract. Toss until well mixed.
3. Roll out one half of the pie dough and fit it into a 9-inch pie pan.
4. Pour the peach mixture into the prepared pie crust and dot with butter cubes.
5. Roll out the second half of the dough and place it over the filling. Trim and crimp the edges to seal.
6. Cut slits in the top crust for steam to escape and brush with beaten egg.
7. Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for 35-40 minutes or until the crust is golden brown and the filling is bubbling.
8. Allow the pie to cool for at least 2 hours before serving.

Storage

Store the pie covered in the refrigerator for up to 5 days.

Reheating

Reheat slices in a preheated oven at 350°F for 10-15 minutes until warmed through.
