Ingredients

1 cup mashed sweet potatoes
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/2 cup unsalted butter, chilled and cubed
1/4 cup buttermilk
1 teaspoon vanilla extract

Instructions

1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and cinnamon.
3. Cut in the chilled cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
4. In a separate bowl, mix the mashed sweet potatoes, buttermilk, and vanilla extract.
5. Add the wet ingredients to the dry ingredients and stir until just combined, being careful not to overmix.
6. Turn the dough out onto a floured surface and gently knead it a few times until it comes together.
7. Roll out the dough to about 1/2-inch thickness and use a biscuit cutter to cut out rounds.
8. Place the biscuits onto the prepared baking sheet, ensuring they are slightly touching each other.
9. Bake in the preheated oven for 12-15 minutes or until golden brown on top.
10. Remove from the oven and allow to cool slightly before serving.

Storage

Store leftover biscuits in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.

Reheating

To reheat, wrap biscuits in aluminum foil and warm in a 350°F oven for 5-10 minutes.
