Homestyle Chicken Pie

Ingredients

1 lb boneless, skinless chicken breasts
1 cup diced carrots
1 cup diced potatoes
1 cup frozen peas
1 cup frozen corn
1/2 cup chopped onions
1/2 cup unsalted butter
1/3 cup all-purpose flour
2 cups chicken broth
1 cup whole milk
1 tsp salt
1 tsp black pepper
1 tsp dried thyme
1 package (14 oz) refrigerated pie crusts

Instructions

1. Preheat your oven to 425 degrees F.
2. Cook the chicken breasts in a pot of boiling water for 15 minutes, then dice and set aside.
3. In a large skillet, melt the butter over medium heat. Add the onions, carrots, and potatoes. Cook for 10 minutes until softened.
4. Stir in the flour and cook for 1 minute.
5. Gradually add the chicken broth and milk, stirring constantly until the mixture thickens.
6. Add the diced chicken, peas, corn, salt, pepper, and thyme. Mix well.
7. Roll out one pie crust and place it in the bottom of a 9-inch pie plate.
8. Pour the chicken mixture into the pie crust.
9. Cover with the second pie crust, seal the edges, and cut slits in the top to allow steam to escape.
10. Bake in the preheated oven for 30 minutes, or until the crust is golden brown.

Storage

Store leftover chicken pie in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, cover the pie with aluminum foil and bake in a preheated oven at 350 degrees F for 15-20 minutes.
