Homestyle Chicken and Herb Soup

This comforting homestyle chicken soup is a savory blend of tender chicken, fresh herbs, and hearty vegetables, offering a warm and satisfying dish perfect for any day.

Ingredients

2 lbs chicken thighs
8 cups chicken broth
2 cups sliced carrots
2 cups sliced celery
1 large onion, chopped
4 cloves garlic, minced
1 tsp salt
1 tsp black pepper
1 tbsp olive oil
1/2 tsp dried thyme
1/2 tsp dried rosemary
1/2 tsp dried sage
1/4 cup fresh parsley, chopped
2 cups egg noodles
1 bay leaf

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add chicken thighs, cook until browned on both sides, about 5 minutes per side, then remove from pot.
3. In the same pot, add onion, garlic, carrots, and celery, sauté until onions are translucent.
4. Add chicken broth, thyme, rosemary, sage, bay leaf, salt, and pepper, bring to a boil.
5. Return chicken to the pot, reduce heat, cover, and simmer for 25 minutes.
6. Remove chicken, shred, and return to the pot with the egg noodles.
7. Cook until noodles are tender, about 8-10 minutes.
8. Stir in fresh parsley, adjust seasoning if needed, and serve hot.

Storage

Allow the soup to cool completely, then store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stovetop over medium heat, stirring occasionally, until heated through.
