Ingredients
1 whole chicken (3-4 lbs)
12 cups water
1 large onion, chopped
3 carrots, sliced
3 celery stalks, sliced
3 cloves garlic, minced
1 bay leaf
1 teaspoon salt
1/2 teaspoon pepper
8 oz egg noodles
2 tablespoons fresh parsley, chopped
Instructions
1. In a large pot, combine chicken, water, onion, carrots, celery, garlic, bay leaf, salt, and pepper.
2. Bring to a boil and then reduce to a simmer. Cook for about 1-1.5 hours until chicken is fully cooked and tender.
3. Remove chicken from pot, let cool, and shred meat off the bones. Discard skin and bones.
4. Strain the broth and return it to the pot.
5. Add egg noodles to the broth and cook for about 8-10 minutes until tender.
6. Return shredded chicken to the pot and heat through.
7. Stir in fresh parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a saucepan over medium heat until warm, stirring occasionally. You may add a splash of water or broth if needed.
