Homemade Strawberry Delight Cake

Ingredients
2 1/2 cups all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
1 3/4 cups granulated sugar
1/2 cup whole milk
1/2 cup strawberry puree
2 tsp vanilla extract
3 large eggs
1 cup fresh strawberries, diced
1/2 cup sour cream
2 tbsp cornstarch
1/2 cup heavy cream
Instructions
1. Preheat your oven to 350°F (177°C). Grease and flour two 9-inch round cake pans.
2. In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
3. In a large bowl, beat the butter and sugar until light and fluffy.
4. Add the eggs one at a time, beating well after each addition.
5. Mix in the strawberry puree and vanilla extract.
6. Gradually add the flour mixture to the wet ingredients, alternating with the milk, starting and ending with the flour mixture.
7. Gently fold in the diced strawberries and sour cream.
8. Divide the batter evenly between the prepared cake pans.
9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
10. Allow the cakes to cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
11. For the frosting, whip the heavy cream and cornstarch together until stiff peaks form.
12. Frost the cooled cakes with the whipped cream mixture.
Storage
Store the cake in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, allow the cake slice to come to room temperature or warm gently in a microwave for 10-15 seconds.
