Ingredients
8 slices of French baguette
2 cups heirloom tomatoes, diced
2 tbsp olive oil
1 tbsp balsamic vinegar
2 cloves garlic, minced
1/4 cup fresh basil leaves, chopped
Salt and pepper to taste
Instructions
1. Preheat your oven to 400°F and arrange baguette slices on a baking sheet.
2. Brush each slice with olive oil and toast in the oven for about 5-7 minutes or until golden brown.
3. In a bowl, combine diced tomatoes, balsamic vinegar, minced garlic, and chopped basil.
4. Season the mixture with salt and pepper, then gently toss to combine.
5. Spoon the tomato mixture onto each toasted baguette slice.
6. Drizzle any remaining olive oil over the bruschetta before serving.
Storage
Store leftover tomato mixture in an airtight container in the refrigerator for up to 2 days.
