Ingredients
2 lbs fresh carrots
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tbsp fresh thyme leaves
1 tbsp honey
1 tbsp apple cider vinegar
Instructions
1. Preheat the oven to 400°F (200°C).
2. Peel the carrots and cut them into uniform sticks or leave whole if they are small and tender.
3. In a large bowl, toss the carrots with olive oil, salt, and black pepper until evenly coated.
4. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
5. Roast in the preheated oven for 25-30 minutes, or until tender and caramelized, turning halfway through.
6. In a small bowl, mix honey and apple cider vinegar, then drizzle over the hot roasted carrots.
7. Sprinkle fresh thyme leaves over the top before serving.
Storage
Store roasted carrots in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a 350°F (175°C) oven for 10-15 minutes or until warmed through, or microwave for 1-2 minutes.
