Ingredients
3 lbs pork loin
2 tbsp olive oil
1 cup chicken broth
1/2 cup apple cider vinegar
2 cloves garlic, minced
1 medium onion, sliced
1 tbsp fresh rosemary, chopped
1 tsp thyme
1/2 tsp salt
1/2 tsp black pepper
1/4 cup honey
Instructions
1. Heat olive oil in a pan over medium heat and sear the pork loin until golden brown on all sides.
2. Transfer the pork loin to the slow cooker.
3. In a bowl, mix chicken broth, apple cider vinegar, garlic, rosemary, thyme, salt, and black pepper.
4. Pour the mixture over the pork loin in the slow cooker.
5. Add sliced onion on top of the pork loin.
6. Drizzle honey over the top.
7. Cover and cook on low for 6-8 hours or until the pork is tender.
8. Remove the pork loin from the slow cooker and let it rest for 10 minutes before slicing.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place slices in a microwave-safe dish and heat gently until warmed through, or cover and reheat in a preheated oven at 300°F until heated.
