Heritage Parmesan Chicken

Ingredients

4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs
1 cup grated Parmesan cheese
2 cups marinara sauce
1 cup shredded mozzarella cheese
1/4 cup olive oil
Salt and pepper to taste

Instructions

1. Preheat your oven to 375°F (190°C).
2. Season the chicken breasts with salt and pepper.
3. Dredge each chicken breast in flour, shaking off the excess.
4. Dip the floured chicken into the beaten eggs.
5. Coat the chicken in the breadcrumb and Parmesan mixture.
6. Heat olive oil in a large skillet over medium heat.
7. Cook the chicken until golden brown on both sides, about 3-4 minutes per side.
8. Transfer the chicken to a baking dish.
9. Pour marinara sauce over the chicken and top with mozzarella cheese.
10. Bake in the oven for 25-30 minutes, until the cheese is bubbly and golden brown.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes, or until heated through.
