Ingredients

4 tbsp unsalted butter
1 large onion, finely chopped
2 cloves garlic, minced
4 cups fresh corn kernels (from about 6 ears of corn)
2 large russet potatoes, peeled and diced
4 cups chicken broth
1 cup heavy cream
1 tsp salt
1/2 tsp freshly ground black pepper
1/4 tsp smoked paprika
2 tbsp fresh parsley, chopped
Cooked bacon crumbles, for garnish (optional)

Instructions

1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent, about 5 minutes.
2. Stir in the corn kernels and diced potatoes, cooking for another 5 minutes.
3. Pour in the chicken broth, bring to a boil, then reduce heat and let simmer for 15 minutes, or until the potatoes are tender.
4. Add the heavy cream, salt, pepper, and smoked paprika, stirring well to combine. Simmer for an additional 10 minutes.
5. Adjust seasoning to taste, then stir in chopped parsley just before serving.
6. Serve hot, garnished with bacon crumbles if desired.

Storage

Store leftover chowder in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently on the stovetop over low heat, stirring occasionally until heated through.
