Heritage Chicken Marsala

Ingredients
4 boneless, skinless chicken breasts
1 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup olive oil
1/2 cup dry Marsala wine
1 cup chicken broth
8 ounces mushrooms, sliced
2 tablespoons unsalted butter
2 cloves garlic, minced
1/4 cup heavy cream
2 tablespoons chopped fresh parsley
Instructions
1. Pound the chicken breasts to 1/2-inch thickness.
2. Mix flour, salt, and pepper in a shallow dish.
3. Dredge the chicken in the flour mixture, shaking off excess.
4. Heat olive oil in a large skillet over medium heat.
5. Cook chicken in oil until golden brown on both sides, about 3-4 minutes per side.
6. Remove chicken from skillet and set aside.
7. In the same skillet, add mushrooms and cook until they release their moisture, about 5 minutes.
8. Stir in garlic and cook for an additional minute.
9. Pour in Marsala wine, scraping up any browned bits from the bottom of the skillet.
10. Add chicken broth and bring to a simmer.
11. Return the chicken to the skillet and cook until the sauce thickens and the chicken is cooked through, about 10 minutes.
12. Stir in butter and heavy cream.
13. Garnish with parsley before serving.
Storage
Allow to cool completely, then store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stovetop over low heat or in the microwave until warmed through.
