Herbed Zucchini Boats

Ingredients
4 medium zucchinis
1 tbsp olive oil
1/2 cup chopped onions
1 clove garlic, minced
1/2 cup cherry tomatoes, halved
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
1 tbsp chopped fresh basil
1 tsp chopped fresh thyme
Salt and pepper to taste
Instructions
1. Preheat your oven to 375°F (190°C).
2. Slice the zucchinis in half lengthwise and scoop out the seeds to create boats.
3. Heat olive oil in a pan over medium heat and sauté onions until translucent.
4. Add garlic and cherry tomatoes, cooking until softened.
5. In a bowl, mix ricotta, Parmesan, breadcrumbs, basil, thyme, salt, and pepper.
6. Stir the sautéed mixture into the cheese blend.
7. Fill each zucchini boat with the mixture and place them on a baking sheet.
8. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes, or until heated through.
