Herbed Turkey and Quinoa Meatloaf
A lean twist on the classic meatloaf, this Herbed Turkey and Quinoa Meatloaf is packed with fresh herbs and nutritious quinoa. Perfectly moist and flavorful, it's a healthy option for a comfort meal.

Ingredients
1 lb ground turkey
1 cup cooked quinoa
1/2 cup oat flour
1/2 cup finely chopped onion
1/2 cup chopped fresh parsley
1/4 cup chopped fresh basil
2 cloves garlic, minced
1/4 cup low-sodium chicken broth
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp dried thyme
1/2 tsp salt
1/2 tsp black pepper
1 egg, beaten
Instructions
1. Preheat the oven to 375°F (190°C) and lightly grease a loaf pan.
2. In a large bowl, combine cooked quinoa, oat flour, onion, parsley, basil, and garlic.
3. Add ground turkey, chicken broth, tomato paste, Worcestershire sauce, dried thyme, salt, pepper, and beaten egg to the bowl.
4. Mix ingredients well until evenly combined.
5. Transfer the mixture to the prepared loaf pan, pressing down slightly to form.
6. Bake in the preheated oven for 45-50 minutes, until the meatloaf reaches an internal temperature of 165°F (74°C).
7. Let the meatloaf rest for 10 minutes before slicing and serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat slices in the microwave for 1-2 minutes on high, or until heated through.
