Herbed Slow Cooker Chicken Dinner

Ingredients
4 lbs whole chicken
3 carrots, sliced
2 onions, quartered
3 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp dried rosemary
1 tsp dried thyme
2 tbsp olive oil
1 cup chicken broth
Instructions
1. Prepare the chicken by removing the giblets and patting it dry with paper towels.
2. In a large skillet, heat olive oil over medium-high heat and brown the chicken on all sides for about 5-7 minutes.
3. Place carrots, onions, and garlic in the bottom of the slow cooker.
4. Season the chicken with salt, pepper, rosemary, and thyme, then place it on top of the vegetables.
5. Pour chicken broth over the chicken and vegetables.
6. Cover and cook on low for 6-8 hours or until the chicken is fully cooked and tender.
7. Once cooked, carefully remove the chicken and vegetables from the slow cooker and let it rest for a few minutes before carving.
Storage
Store any leftovers in an airtight container and refrigerate for up to 3 days.
Reheating
To reheat, place the chicken and vegetables in an oven-safe dish, cover with foil, and warm in a preheated oven at 350°F for about 15-20 minutes or until heated through.
