Herbed Lemon Chicken Rice Casserole

Ingredients

2 lbs chicken breast, cubed
1 cup long-grain white rice
2 cups chicken broth
1/2 cup lemon juice
1/4 cup olive oil
1 tbsp fresh thyme, chopped
1 tbsp fresh parsley, chopped
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
1 tsp salt
1 cup frozen peas
1/2 cup grated Parmesan cheese

Instructions

1. Preheat the oven to 375°F.
2. In a large bowl, combine the chicken, rice, chicken broth, lemon juice, olive oil, thyme, parsley, garlic powder, onion powder, pepper, and salt.
3. Transfer the mixture into a greased 9x13 inch baking dish.
4. Cover the dish with aluminum foil and bake for 30 minutes.
5. Remove the foil and stir in the frozen peas.
6. Sprinkle the Parmesan cheese over the top and bake uncovered for an additional 10-15 minutes, or until the rice is tender and the chicken is cooked through.
7. Let it cool for a few minutes before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 350°F for 15 minutes or until warmed through.
