Ingredients
1 English cucumber, thinly sliced
8 slices of whole wheat bread
4 oz cream cheese, softened
2 tbsp fresh dill, chopped
1 tbsp fresh chives, chopped
1 tbsp lemon juice
Salt to taste
Pepper to taste
4 tbsp unsalted butter, softened
Instructions
1. In a small bowl, mix the softened cream cheese, chopped dill, chopped chives, lemon juice, salt, and pepper to create the herbed spread.
2. Spread a thin layer of butter on one side of each slice of the whole wheat bread.
3. Evenly spread the herbed cream cheese mixture on the buttered side of four bread slices.
4. Layer the cucumber slices over the cream cheese mixture, ensuring they are evenly distributed.
5. Top with the remaining bread slices, buttered side down.
6. Carefully cut the crusts off each sandwich and slice each sandwich into quarters, forming neat triangles.
7. Serve immediately or store in an airtight container if serving later.
