Herbed Citrus Dry Brine for Turkey

Ingredients
12 lbs whole turkey
1/4 cup kosher salt
2 tbsp brown sugar
1 tbsp finely grated lemon zest
1 tbsp finely grated orange zest
2 tsp dried thyme
2 tsp dried rosemary
1 tsp black pepper
Instructions
1. Pat the turkey dry with paper towels and ensure it is completely thawed.
2. In a small bowl, mix together the kosher salt, brown sugar, lemon zest, orange zest, thyme, rosemary, and black pepper.
3. Rub the dry brine mixture evenly over the turkey, making sure to cover all parts, including under the skin where possible.
4. Place the turkey on a rack over a baking sheet and refrigerate uncovered for 24-48 hours.
5. Before cooking, rinse the turkey thoroughly under cold water to remove the brine and pat dry with paper towels.
6. Proceed with your preferred roasting method.
Storage
Store the dry brined turkey in the refrigerator, uncovered, for up to 48 hours before cooking.
Reheating
To reheat the cooked turkey, place it in a preheated oven at 325°F and heat until warmed through, typically about 20 minutes. Cover with foil to prevent drying.
