Herbed Chicken and Wild Rice Casserole

Ingredients
2 lbs boneless, skinless chicken breasts, cubed
1 cup wild rice
2 cups chicken broth
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 medium onion, chopped
3 cloves garlic, minced
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
1/4 cup fresh parsley, chopped
Instructions
1. Preheat oven to 350°F (175°C).
2. In a large skillet over medium heat, add olive oil and cook chicken until browned.
3. Remove chicken and set aside. In the same skillet, sauté onion and garlic until translucent.
4. Add wild rice to skillet and stir until coated with oil and aromatics.
5. Stir in chicken broth and bring to a boil.
6. Reduce heat, cover, and let simmer for 20 minutes.
7. In a large bowl, combine cooked rice mixture, chicken, heavy cream, mozzarella, Parmesan, thyme, rosemary, salt, and pepper.
8. Transfer to a greased baking dish.
9. Cover with foil and bake in preheated oven for 25 minutes.
10. Remove foil, sprinkle with fresh parsley, and bake for an additional 10 minutes or until cheese is bubbly and golden.
11. Serve warm and enjoy.
Storage
Store covered in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F (175°C) for 15 minutes or until heated through.
