Herbed Chicken and Fluffy Dumplings

Ingredients

4 lbs whole chicken, cut into pieces
1 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
3 carrots, sliced
3 celery stalks, chopped
8 cups chicken broth
2 tsp dried thyme
1 tsp dried rosemary
2 cups all-purpose flour
1 tbsp baking powder
1 tsp salt
1/2 cup unsalted butter, melted
1 cup whole milk

Instructions

1. Heat olive oil in a large pot over medium-high heat and brown the chicken pieces for about 5 minutes on each side.
2. Remove chicken and set aside. In the same pot, add onion, garlic, carrots, and celery, sautéing until the vegetables are softened.
3. Return the chicken to the pot, add chicken broth, thyme, and rosemary. Bring to a boil, then reduce heat to a simmer and cover. Cook for about 40 minutes until the chicken is tender.
4. In a large bowl, mix flour, baking powder, and salt. Stir in melted butter and milk until a dough forms.
5. Drop spoonfuls of the dumpling dough into the simmering broth. Cover and cook for an additional 15 minutes until dumplings are cooked through.
6. Remove chicken from the pot, shred the meat, and return it to the pot with the dumplings. Stir gently and serve hot.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, gently warm on the stovetop over medium heat, adding a splash of chicken broth if necessary to maintain desired consistency.
