Herbed Chicken and Dumplings with Carrot Medley

Ingredients
1 whole chicken (about 4 lbs), cut into pieces
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
4 large carrots, sliced into rounds
2 celery stalks, diced
4 cups chicken broth
2 cups all-purpose flour
1 tbsp baking powder
1 cup milk
2 tbsp butter, melted
1/4 cup fresh parsley, chopped
1/4 cup fresh dill, chopped
Salt and pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add chicken pieces and sear on all sides until golden brown. Remove and set aside.
2. In the same pot, add onion and garlic, sautéing until translucent.
3. Add carrots and celery, cooking for an additional 5 minutes.
4. Return chicken to the pot, pouring in chicken broth. Bring to a boil, then reduce to a simmer for 25 minutes.
5. In a bowl, mix flour, baking powder, milk, melted butter, parsley, and dill to create the dumpling dough.
6. Drop spoonfuls of dough into the simmering stew. Cover and cook for 15 minutes or until dumplings are cooked through.
7. Season with salt and pepper to taste before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stove over low heat until the chicken is heated through and dumplings are soft.
