Ingredients
2 lbs chicken thighs
6 cups chicken broth
2 cups all-purpose flour
1 tbsp baking powder
1 tsp salt
1/2 tsp black pepper
1/4 cup fresh parsley, chopped
1/4 cup fresh dill, chopped
1 cup whole milk
2 tbsp unsalted butter
1 large onion, diced
3 cloves garlic, minced
2 carrots, sliced
2 celery stalks, sliced
1 bay leaf
Instructions
1. In a large pot, melt the butter over medium heat and sauté the onion, garlic, carrots, and celery until softened.
2. Add the chicken thighs and bay leaf to the pot, then pour in the chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
3. Meanwhile, in a bowl, mix flour, baking powder, salt, and pepper. Stir in milk and half of the chopped herbs until a soft dough forms.
4. Drop spoonfuls of dough into the simmering chicken mixture. Cover and simmer for another 15 minutes, or until the dumplings are cooked through.
5. Remove the bay leaf, stir in the remaining herbs, and serve hot.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stovetop over low heat, stirring occasionally until heated through.
