Ingredients

1 lb beef stew meat, cubed
2 tbsp olive oil
1 medium onion, chopped
3 cloves garlic, minced
2 large carrots, sliced
2 stalks celery, chopped
1 cup pearl barley
8 cups beef broth
1 can (14.5 oz) diced tomatoes
1 tsp dried thyme
1 tsp dried rosemary
1 bay leaf
Salt and pepper to taste
1 cup fresh spinach leaves
2 tbsp chopped fresh parsley

Instructions

1. In a large pot, heat olive oil over medium heat. Add beef cubes and brown on all sides.
2. Remove beef and set aside. In the same pot, add onions and garlic; sauté until soft.
3. Stir in carrots and celery, cooking for another 5 minutes.
4. Return beef to the pot and add barley, beef broth, tomatoes, thyme, rosemary, and bay leaf.
5. Bring to a boil, then reduce heat to low and cover; simmer for 1 hour.
6. Season with salt and pepper. Add spinach leaves and cook until wilted.
7. Stir in chopped parsley before serving hot.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat on the stovetop over medium heat until warmed through, or microwave in a microwave-safe bowl for 2-3 minutes.
