Herbed Avocado Potato Salad

Ingredients
2 lbs russet potatoes
2 ripe avocados
1/4 cup fresh dill, chopped
1/4 cup fresh parsley, chopped
2 tbsp olive oil
1 tbsp lemon juice
1/2 tsp salt
1/4 tsp black pepper
1/4 cup red onion, finely diced
2 tbsp apple cider vinegar
Instructions
1. Boil potatoes in salted water until tender, about 20 minutes.
2. Drain and let cool, then cut into bite-sized pieces.
3. In a large bowl, combine avocado, olive oil, lemon juice, salt, and pepper; mash until smooth.
4. Add cooled potatoes, dill, parsley, red onion, and apple cider vinegar to the avocado mixture and toss to combine.
5. Chill for at least 30 minutes before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
