Ingredients

2 cups whole wheat flour
1 cup cold unsalted butter, diced
1/2 cup ice-cold water
1/2 teaspoon salt
1 tablespoon fresh thyme leaves
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh parsley, chopped

Instructions

1. In a large bowl, mix the whole wheat flour and salt.
2. Add the diced cold unsalted butter and rub it into the flour until the mixture resembles coarse crumbs.
3. Stir in the fresh thyme leaves, rosemary, and parsley.
4. Gradually add ice-cold water, mixing gently until a dough forms.
5. Roll the dough into a rectangle on a lightly floured surface and fold into thirds.
6. Rotate the dough 90 degrees and repeat rolling and folding two more times.
7. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes before using.

Storage

Store wrapped in plastic wrap or in an airtight container in the refrigerator for up to 3 days.

Reheating

Preheat oven to 375°F (190°C) and bake until heated through, about 10-12 minutes.
