Ingredients
2 lbs sweet potatoes (peeled and cubed)

1/4 tsp black pepper
1/2 cup chopped parsley
1/4 cup chopped chives
2 tbsp chopped fresh dill
1 cup cherry tomatoes (halved)
1/4 cup crumbled feta cheese
1/4 cup lemon juice
1 tbsp Dijon mustard
1 tbsp honey
Instructions
1. Preheat oven to 400°F and line a baking sheet with parchment paper.
2. In a large bowl, toss the sweet potatoes with olive oil, salt, and pepper.
3. Spread the potatoes on the baking sheet and roast for 25-30 minutes until tender and slightly crispy.
