Herb-Infused Spiced Turkey Roast

Ingredients
12 lbs whole turkey
1 cup unsalted butter
2 tbsp olive oil
4 cloves garlic, minced
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
1 tbsp ground cumin
1 tbsp smoked paprika
2 tsp salt
1 tsp black pepper
1 lemon, zested and juiced
1 cup chicken broth
Instructions
1. Preheat the oven to 325°F (160°C).
2. Rinse and pat dry the turkey, ensuring the cavity is empty.
3. In a bowl, mix together the butter, olive oil, garlic, rosemary, thyme, cumin, smoked paprika, salt, pepper, lemon zest, and juice to form a paste.
4. Gently loosen the skin over the turkey breast and thighs with a spatula, taking care not to tear the skin.
5. Rub half of the herb paste under the skin and the remaining over the turkey's surface.
6. Place the turkey in a roasting pan and pour chicken broth into the bottom of the pan.
7. Roast the turkey in the preheated oven for approximately 3.5 hours, or until the internal temperature reaches 165°F (74°C). Baste the turkey every hour with the pan drippings.
8. Remove the turkey from the oven and let it rest for 30 minutes before carving.
Storage
Store leftover turkey in an airtight container in the refrigerator for up to 4 days.
Reheating
To reheat, place the turkey slices in a baking dish with a splash of chicken broth, cover with foil, and warm in a 325°F (160°C) oven for 20 minutes.
