Herb-Infused Slow-Cooked Chicken

Ingredients

1 whole chicken (4-5 lbs)
2 tsp salt
1 tsp black pepper
1 lemon, halved
4 cloves garlic, minced
1 onion, quartered
4 sprigs fresh rosemary
4 sprigs fresh thyme
2 tbsp olive oil
1 cup chicken broth

Instructions

1. Rinse the chicken under cold water and pat dry with paper towels.
2. In a small bowl, mix salt, black pepper, and minced garlic.
3. Rub the mixture all over the chicken, including inside the cavity.
4. Place lemon halves and onion quarters inside the chicken cavity.
5. Tuck rosemary and thyme sprigs around the chicken.
6. Drizzle olive oil over the chicken and rub to coat evenly.
7. Pour chicken broth into the slow cooker.
8. Carefully place the chicken into the slow cooker.
9. Cover and cook on low for 6-8 hours, or high for 4-5 hours, until the chicken is fully cooked and tender.
10. Remove the chicken from the slow cooker and let it rest for 10 minutes before carving and serving.

Storage

Store leftover chicken in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat chicken in the oven at 350°F until warmed through, or use a microwave for a quick reheat.
