Herb-Infused Shepherd's Pie with Sweet Potato Mash

Ingredients

1 tbsp olive oil
1 lb ground beef
1 onion, diced
2 cloves garlic, minced
1 cup carrots, diced
1 cup peas
1 cup corn kernels
2 tbsp tomato paste
1 cup beef broth
1 tbsp Worcestershire sauce
1 tsp thyme
1 tsp rosemary
Salt and pepper to taste
4 cups sweet potatoes, peeled and cubed
1/4 cup milk
2 tbsp butter
1/2 tsp nutmeg
Salt and pepper to taste

Instructions

1. Preheat the oven to 375°F.
2. Heat olive oil in a large skillet over medium heat.
3. Add onions and garlic, sauté until translucent.
4. Add ground beef, cook until browned.
5. Stir in carrots, peas, corn, tomato paste, beef broth, Worcestershire sauce, thyme, rosemary, salt and pepper.
6. Simmer for 10 minutes until the mixture thickens.
7. Boil sweet potatoes in a pot until tender, about 15 minutes.
8. Drain and mash with milk, butter, nutmeg, salt, and pepper.
9. Spread beef mixture in a baking dish and top with sweet potato mash.
10. Bake for 25 minutes until golden brown.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 350°F for 15 minutes or until heated through.
