Herb-Infused Roasted Red Potatoes

Ingredients

2 lbs red potatoes, quartered
3 tbsp olive oil
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tbsp fresh parsley, chopped
3 cloves garlic, minced
1 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp smoked paprika
1 lemon, zest only

Instructions

1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine olive oil, rosemary, thyme, parsley, garlic, salt, black pepper, smoked paprika, and lemon zest.
3. Add the quartered potatoes to the bowl and toss until the potatoes are evenly coated with the herb mixture.
4. Spread the potatoes in a single layer on the prepared baking sheet.
5. Roast in the oven for 35-40 minutes or until golden brown and crispy, flipping halfway through for even cooking.
6. Remove from the oven and let cool slightly before serving.

Storage

Store the roasted potatoes in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place the potatoes on a baking sheet and warm in a preheated oven at 350°F (175°C) for about 10 minutes or until heated through.
