Herb-Infused Roast Pork Loin

Ingredients
4 lbs pork loin
3 tbsp olive oil
2 tsp sea salt
1 tsp ground black pepper
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
1 tbsp garlic powder
1 lemon, zest and juice
1/4 cup honey
1/2 cup chicken broth
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix olive oil, sea salt, black pepper, rosemary, thyme, garlic powder, lemon zest, and lemon juice.
3. Rub the mixture evenly over the pork loin.
4. Place the pork loin on a roasting rack in a baking dish.
5. Drizzle honey over the top of the pork loin.
6. Pour chicken broth into the bottom of the pan to keep the meat moist during roasting.
7. Roast in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 145°F (63°C).
8. Let the pork loin rest for 10 minutes before slicing and serving.
Storage
Store leftover pork loin in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat slices in a skillet over medium heat until warmed through, or microwave on high for about 1-2 minutes.
