Ingredients

1 (4 lb) beef sirloin roast
2 tbsp olive oil
1 tbsp sea salt
1 tsp black pepper
3 cloves garlic, minced
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
2 tbsp unsalted butter, melted
1 cup beef broth

Instructions

1. Preheat the oven to 375°F (190°C).
2. Pat the beef sirloin roast dry with paper towels and rub with olive oil.
3. Season the roast with sea salt and black pepper on all sides.
4. In a small bowl, combine minced garlic, rosemary, and thyme.
5. Rub the herb mixture evenly over the roast.
6. Place the roast on a wire rack in a roasting pan.
7. Roast in the oven for 1 hour and 30 minutes or until the internal temperature reaches 135°F (for medium-rare).
8. In the last 15 minutes of roasting, brush the roast with melted butter.
9. Remove from oven and let it rest for 15 minutes.
10. Slice and serve with drippings.

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat gently in a 300°F oven covered with foil for about 15 minutes, or until heated through.
