Herb-Infused Lemon Baked Chicken

Ingredients

4 lbs whole chicken
1/4 cup olive oil
3 cloves garlic, minced
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
1 lemon, zested and juiced
1 tbsp honey
1 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika
1 lemon, sliced
1 onion, quartered

Instructions

1. Preheat your oven to 375°F (190°C).
2. In a small bowl, combine olive oil, minced garlic, rosemary, thyme, lemon zest and juice, honey, salt, pepper, and smoked paprika to create a marinade.
3. Rub the marinade over the entire chicken, ensuring even coverage.
4. Place the onion quarters and lemon slices inside the chicken cavity.
5. Set the chicken in a roasting pan.
6. Roast in the preheated oven for 1 hour and 30 minutes, or until the internal temperature reaches 165°F.
7. Let the chicken rest for 10 minutes before carving.

Storage

Store leftover chicken in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat the chicken in a preheated oven at 350°F (175°C) for about 15-20 minutes until heated through.
