Herb-Infused Chicken with Wild Mushrooms

Ingredients
4 boneless chicken breasts
8 oz wild mushrooms, sliced
1 cup chicken broth
1/2 cup heavy cream
2 tbsp olive oil
2 cloves garlic, minced
1 tbsp fresh thyme leaves
1 tbsp fresh rosemary, chopped
Salt and pepper to taste
1 tbsp butter
1/4 cup dry white wine
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown on both sides.
3. Remove the chicken and set aside. In the same skillet, add butter and garlic. Sauté until fragrant.
4. Add the wild mushrooms, cooking until softened and browned.
5. Pour in the white wine and let it simmer until reduced by half.
6. Stir in chicken broth, heavy cream, thyme, and rosemary. Mix well.
7. Return the chicken to the skillet. Cover and simmer for 15-20 minutes or until the chicken is fully cooked.
8. Serve hot, garnished with additional fresh herbs if desired.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheat gently in a skillet over low heat until warmed through, or microwave on low power.
