Herb-Infused Chicken Stew

A comforting and hearty chicken stew infused with aromatic herbs and vibrant vegetables, perfect for a cozy family meal.

Ingredients

2 lbs chicken thighs
1 cup diced carrots
1 cup diced potatoes
1 cup chopped celery
1 large onion, diced
2 cloves garlic, minced
32 oz chicken broth
1 cup water
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
1 bay leaf

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add the chicken thighs and cook until browned on all sides, about 8 minutes.
3. Remove the chicken from the pot and set aside.
4. In the same pot, add onions, garlic, carrots, celery, and potatoes. Cook for about 5 minutes until vegetables are slightly tender.
5. Return the chicken to the pot and pour in chicken broth and water.
6. Stir in thyme, rosemary, bay leaf, salt, and pepper.
7. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes or until the chicken is cooked through and vegetables are tender.
8. Remove bay leaf before serving.

Storage

Allow to cool completely, then store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a saucepan over medium heat until warmed through, or microwave in a covered dish for 2-3 minutes.
