Ingredients

2 lbs chicken thighs
8 cups chicken broth
1 large onion, diced
3 cloves garlic, minced
1 inch ginger root, minced
2 carrots, sliced
2 celery stalks, sliced
1 lemon, juiced
1 tsp lemon zest
1 tsp dried thyme
1 tsp dried rosemary
1/2 cup fresh parsley, chopped
Salt and pepper to taste
2 tbsp olive oil

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add diced onion, minced garlic, and minced ginger, sauté for 3-4 minutes until fragrant.
3. Add chicken thighs to the pot, cooking until browned on all sides.
4. Pour in chicken broth and bring to a boil.
5. Add carrots, celery, thyme, rosemary, salt, and pepper.
6. Reduce heat and let simmer for 30 minutes.
7. Remove chicken thighs and shred meat, then return to pot.
8. Stir in lemon juice, lemon zest, and fresh parsley, simmer for an additional 10 minutes.
9. Serve hot, garnished with extra parsley if desired.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating
