Ingredients

2 lbs boneless skinless chicken thighs
1 cup jasmine rice
2 cups chicken broth
1 cup water
1 tbsp olive oil
1 medium onion, chopped
3 cloves garlic, minced
1/2 cup peas
1/2 cup diced carrots
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper

Instructions

1. Preheat the oven to 350°F (175°C).
2. Heat olive oil in a large oven-safe skillet over medium heat and sauté the onions and garlic until translucent.
3. Add the chicken thighs to the skillet, searing each side for about 3-4 minutes until golden brown.
4. Stir in jasmine rice, chicken broth, and water.
5. Add peas, carrots, parsley, basil, thyme, salt, and pepper. Mix everything thoroughly.
6. Cover the skillet with a lid or foil and transfer to the preheated oven.
7. Bake for 30-35 minutes, until the rice is tender and the chicken is cooked through.
8. Remove from the oven, let it rest for 5 minutes, fluff the rice with a fork, and serve hot.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a microwave-safe dish for 2-3 minutes, or until heated through. Alternatively, reheat in a preheated oven at 300°F for 15-20 minutes.
