Ingredients

1.5 lbs chicken breast, cubed
2 cups jasmine rice
4 cups chicken broth
1 cup frozen peas
1 cup baby carrots, sliced
1 onion, chopped
3 cloves garlic, minced
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried oregano
1/2 tsp black pepper
1/2 tsp salt
1/4 cup fresh parsley, chopped
1/4 cup grated Parmesan cheese

Instructions

1. Preheat oven to 375°F.
2. In a large skillet, heat olive oil over medium heat and sauté onions until translucent.
3. Add garlic and chicken; cook until chicken is browned.
4. Stir in rice, chicken broth, thyme, oregano, salt, and pepper.
5. Transfer mixture to a greased 9x13 inch baking dish.
6. Cover with foil and bake for 25 minutes.
7. Remove foil, add peas and carrots, and stir gently.
8. Bake uncovered for another 15 minutes until rice is tender and liquid is absorbed.
9. Top with parsley and Parmesan cheese before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, microwave individual servings for 1-2 minutes or until heated through.
