Herb-Infused Baked Potatoes with Garlic Butter

Ingredients

4 large russet potatoes
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
1/4 cup unsalted butter
3 cloves garlic, minced
1/2 cup sour cream for serving
1/4 cup chopped chives for garnish

Instructions

1. Preheat your oven to 400°F (204°C).
2. Scrub the potatoes under running water and pat them dry with a towel.
3. Pierce each potato several times with a fork to allow steam to escape during baking.
4. Rub the potatoes with olive oil, then season with salt and pepper.
5. Place the potatoes directly on the oven rack and bake for 50-60 minutes or until tender.
6. While the potatoes are baking, melt the butter in a small saucepan over medium heat.
7. Add minced garlic, rosemary, and thyme to the butter, cooking until fragrant, about 2 minutes.
8. Remove the herb-infused butter from heat and set aside.
9. Once the potatoes are done, remove them from the oven and make a slit on top of each.
10. Fluff the inside of the potatoes with a fork and drizzle with the herb-infused garlic butter.
11. Serve hot, topped with sour cream and a sprinkle of chives.

Storage

Store leftover baked potatoes in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, preheat your oven to 350°F (175°C) and bake the potatoes for 15-20 minutes, or until heated through.
