Herb-Crusted Roasted Pork Tenderloin with Apple Cider Glaze

Ingredients

2 lbs pork tenderloin
1/4 cup olive oil
2 tbsp Dijon mustard
1 tbsp honey
1 tbsp apple cider vinegar
1/2 cup apple cider
2 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes
1/4 cup panko breadcrumbs

Instructions

1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a small bowl, whisk together olive oil, Dijon mustard, honey, apple cider vinegar, apple cider, and minced garlic to form a glaze.
3. In another bowl, combine rosemary, thyme, salt, black pepper, red pepper flakes, and panko breadcrumbs.
4. Pat the pork tenderloin dry with paper towels and brush with half of the glaze mixture.
5. Coat the pork with the herb mixture, pressing gently to adhere.
6. Place the tenderloin on the prepared baking sheet and roast in the oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
7. Brush the tenderloin with the remaining glaze during the last 5 minutes of cooking.
8. Remove from the oven and let it rest for 5-10 minutes before slicing and serving.

Storage

Store the leftover pork tenderloin in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, preheat the oven to 300°F (150°C) and heat the pork tenderloin covered in foil for 10-15 minutes, or until warmed through.
