Ingredients

2 lbs pork tenderloin
2 tbsp olive oil
1 tbsp Dijon mustard
4 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1 lemon, zested

Instructions

1. Preheat your oven to 400°F (205°C) and line a baking sheet with foil.
2. In a small bowl, combine olive oil, Dijon mustard, minced garlic, rosemary, thyme, salt, pepper, and paprika to form a paste.
3. Rub the herb mixture evenly over the pork tenderloin to fully coat it.
4. Place the seasoned pork on the prepared baking sheet and sprinkle lemon zest on top.
5. Roast in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
6. Remove from the oven and let it rest for 5-10 minutes before slicing and serving.

Store the roasted pork tenderloin in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat the pork tenderloin slices in a preheated oven at 300°F (150°C) for about 10 minutes, or until heated through.
