4 lbs boneless pork loin
2 tbsp olive oil
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
1 tbsp kosher salt
1 tsp black pepper
1/2 cup pure maple syrup
2 tbsp Dijon mustard
1 tbsp apple cider vinegar
2 cloves garlic, minced

Instructions

1. Preheat your oven to 400°F (200°C).
2. In a small bowl, combine the rosemary, thyme, salt, and pepper.
3. Rub the pork loin with olive oil, then coat evenly with the herb mixture.
4. Place the pork on a roasting rack in a shallow roasting pan.
5. Roast in the preheated oven for about 1 hour, until the internal temperature reaches 145°F (63°C).
6. Meanwhile, in a saucepan, combine maple syrup, Dijon mustard, apple cider vinegar, and garlic.
7. Bring the mixture to a simmer over medium-low heat, stirring occasionally, and cook until slightly thickened, about 5 minutes.
8. During the last 15 minutes of roasting, brush the maple glaze over the pork loin to caramelize.
9. Remove the pork from the oven and let it rest for 10 minutes before slicing.
