Ingredients
5 lb boneless rib roast
2 tbsp olive oil
1 tbsp sea salt
1 tbsp black pepper
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
4 cloves garlic, minced
1 tbsp Dijon mustard
Instructions
1. Preheat the oven to 450°F.
2. Pat the rib roast dry with paper towels.
3. Combine olive oil, salt, pepper, rosemary, thyme, garlic, and mustard to create a paste.
4. Rub the herb paste evenly over the entire surface of the roast.
5. Place the roast on a rack in a roasting pan and put it in the oven.
6. Roast for 20 minutes, then reduce the temperature to 325°F and continue roasting until the internal temperature reaches 135°F for medium-rare, approximately 1.5 to 2 hours.
7. Remove the roast from the oven and let it rest for 20 minutes before slicing.
Storage
Wrap leftover roast in aluminum foil and store in the refrigerator for up to 3 days.
Reheating
Preheat oven to 300°F, place slices in a baking dish with a splash of beef broth, cover with foil, and heat for 10-15 minutes.
