Ingredients

1 1/2 lbs salmon fillet
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tbsp lemon zest

1 tbsp fresh dill, chopped
1 tbsp fresh thyme, chopped
1/4 cup almond meal

Instructions

1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Place the salmon fillet on the prepared baking sheet and pat dry with paper towels.
3. In a small bowl, combine olive oil, salt, black pepper, and lemon zest.
4. Brush the mixture evenly over the salmon fillet.
5. In another bowl, mix fresh parsley, dill, thyme, and almond meal.
6. Press the herb mixture onto the salmon, ensuring an even coating on top.
7. Bake for 20-25 minutes or until the salmon is cooked through and the crust is golden brown.
8. Remove from the oven and let it rest for 5 minutes before serving.
