Ingredients
1 tbsp olive oil
1 cup sliced mushrooms
1/2 cup chopped onions
3/4 cup chopped fresh spinach
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
1 tsp salt
1/2 tsp black pepper
6 large eggs
1/2 cup heavy cream
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
Instructions
1. Preheat your oven to 375°F.
2. Heat olive oil in a skillet over medium heat.
3. Add mushrooms and onions, sauté until softened, about 5 minutes.
4. Stir in the spinach, parsley, and basil, cooking for an additional 2 minutes.
