Herb & Garlic Parmesan Roasted Potatoes

Ingredients
2 lbs baby potatoes
1/4 cup grated Parmesan cheese
2 tbsp olive oil
1 tbsp minced fresh rosemary
1 tbsp minced fresh thyme
3 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tbsp chopped fresh parsley (for garnish)
Instructions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine olive oil, minced garlic, rosemary, thyme, salt, and pepper.
3. Add the baby potatoes to the bowl and toss until they are evenly coated with the herb mixture.
4. Spread the potatoes in a single layer on the prepared baking sheet.
5. Sprinkle the grated Parmesan cheese evenly over the potatoes.
6. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender.
7. Remove from the oven and garnish with fresh parsley before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Preheat your oven to 350°F (175°C) and reheat the potatoes on a baking sheet for 10-15 minutes, or until heated through.
