Heirloom Tomato Soup
A warm and comforting heirloom tomato soup crafted with fresh, ripe tomatoes and seasoned with aromatic herbs. This classic soup is perfect for cool evenings and pairs wonderfully with crusty bread.

Ingredients
2 lbs ripe heirloom tomatoes
1 medium onion, chopped
2 cloves garlic, minced
2 tbsp olive oil
2 cups vegetable broth
1 tsp salt
1/2 tsp black pepper
1/4 cup fresh basil leaves, chopped
1 tbsp sugar
1 tbsp tomato paste
1/2 cup heavy cream
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onions and minced garlic, sauté until translucent.
3. Stir in tomato paste and cook for 1 minute.
4. Add tomatoes, vegetable broth, salt, pepper, and sugar. Bring to a boil.
5. Reduce heat and let simmer for 20 minutes.
6. Use an immersion blender to blend the soup until smooth.
7. Stir in heavy cream and chopped basil, cook for an additional 5 minutes.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stove over low heat, stirring occasionally until warm.
