Heirloom Stewed Tomatoes

Ingredients
2 lbs ripe heirloom tomatoes
1 medium onion, finely chopped
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp sugar
1 tsp salt
1/2 tsp freshly ground black pepper
1/4 cup fresh basil leaves, chopped
1/4 cup fresh parsley, chopped
1 tbsp balsamic vinegar
Instructions
1. Bring a large pot of water to boil and prepare an ice bath.
2. Score an "X" on the bottom of each tomato, then blanch them in boiling water for 30 seconds and immediately transfer to the ice bath.
3. Once cooled, peel the tomatoes and chop them into large chunks.
4. In a large saucepan, heat olive oil over medium heat and sauté onions until translucent.
5. Add minced garlic and sauté until fragrant, about 1 minute.
6. Stir in chopped tomatoes, sugar, salt, and pepper, and bring to a gentle simmer.
7. Cook uncovered for 30 minutes, stirring occasionally until the tomatoes break down and the mixture thickens.
8. Stir in the balsamic vinegar, fresh basil, and parsley, then remove from heat.
9. Adjust seasoning to taste and serve warm.
Storage
Allow the stewed tomatoes to cool completely, then transfer to an airtight container and store in the refrigerator for up to 5 days.
Reheating
Reheat the stewed tomatoes gently on the stovetop over low heat, stirring occasionally, until warmed through. Alternatively, microwave in a microwave-safe dish, stirring halfway through.
