Heirloom Pot Roast
Heirloom Pot Roast is a traditional and comforting main dish, perfect for family gatherings. This recipe slow-cooks beef to perfection, infused with rich flavors from classic vegetables and aromatic herbs.

Ingredients
3 lbs beef chuck roast
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 onion, chopped
4 cloves garlic, minced
4 carrots, sliced
4 cups beef broth
2 tbsp tomato paste
2 bay leaves
1 tsp dried thyme
1 lb potatoes, cubed
Instructions
1. Season the beef chuck roast with salt and pepper.
2. Heat olive oil in a large pot over medium heat and sear the roast on all sides until browned.
3. Remove the roast and set aside.
4. Add chopped onion and minced garlic to the pot, sauté until fragrant.
5. Stir in sliced carrots and cubed potatoes, cooking until slightly softened.
6. Return the roast to the pot, adding beef broth, tomato paste, bay leaves, and thyme.
7. Bring to a boil, then reduce heat to low and cover, cooking for 3-4 hours until the roast is tender.
8. Remove bay leaves before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a pot over medium heat until warmed through, or microwave in a covered dish for 2-3 minutes.
