Ingredients
1 cup unsalted butter, softened
2 cups granulated sugar
2 large eggs
2 cups buttermilk
4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 tablespoon ground cinnamon
1 cup brown sugar
1 tablespoon vanilla extract
Instructions
1. Preheat the oven to 350°F (175°C) and grease two 9x5-inch loaf pans.
2. In a large mixing bowl, cream together the butter and 2 cups of granulated sugar until light and fluffy.
3. Add the eggs one at a time, beating well after each addition.
4. Stir in the buttermilk and vanilla extract until well combined.
5. In a separate bowl, whisk together the flour, baking soda, and salt.
6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
7. In a small bowl, mix the brown sugar and cinnamon.
8. Pour half of the batter into the prepared loaf pans, sprinkle with half of the cinnamon mixture, then repeat with the remaining batter and cinnamon mixture.
9. Use a knife to swirl the cinnamon mixture through the batter.
10. Bake in preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
11. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Storage
Store the bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
